Wild Rice Burgers

This is a very Minnesotan vegetarian burger recipe. I had my first wild rice burger at Betty’s Pies in Two Harbors, MN after a long backpacking trip. My husband and I loved it so much I had to try duplicating it. I think I came pretty close – although I’m sure my recipe is much healthier 😛

Wild Rice Burgers

Ingredients:

3/4 cup dry wild rice

1/2 cup craisins

1/4 tsp cayenne pepper

1/2 tsp garlic powder

1/2 tsp black pepper

1 Tbsp dry parsley

1 stalk celery, minced

2 cups spinach, chopped finely

1 package 90 second brown and wild rice (I use Uncle Ben’s)

1/2 cup vital wheat gluten flour

1/2 cup plain breadcrumbs

1/2 cup fat free shredded cheese

5 large egg whites, beaten
Directions:

  1. add dry wild rice and craisins to a pot with 2 1/2 cups water; bring to a boil and simmer until wild rice is done
  2. steam the 90 second rice according to directions on package
  3. add all ingredients to a large mixing bowl and combine well
  4. form into patties (about 1/2 cup of the mixture per patty)
  5. place in a greased container and freeze for 2 hours (or all day)
  6. preheat and grease a pancake griddle, then cook burgers for about 20 minutes per side

serve with a whole wheat bun, swiss cheese and cranberry sauce or tomatoes and spinach
