Roasted Veggie Panini

A delicious way to get veggies into a meal. I roasted zucchini and bell pepper on the grill and topped with spinach, hummus and cheese. This combination not only tastes great, but makes for a high protein, high fiber meal packed with vitamins from the veggies. There is also heart-healthy fats from the olive oil and hummus.

Roasted Veggie Panini

Makes 4 servings. Requires about 30 minutes from start to finish.

Ingredients

1 Tbsp olive oil

1 medium red bell pepper, julienned

1 large zucchini squash, sliced lengthwise

¼ tsp black pepper

¼ tsp garlic powder

1/8 tsp salt

2 cups fresh spinach

1 cup hummus

8 slices “ultra-thin” sliced cheese

4 lavash slices (Joseph’s brand) or whole wheat tortillas

Directions:

  1. place zucchini and bell pepper slices in one layer on a cookie sheet or aluminum foil, tossed with the olive oil and seasonings
  2. broil in the oven or grill for about 5 minutes on each side
  3. spread 1/4 cup hummus on each lavash slice or tortilla, then layer with the roasted veggies, 1/2 cup spinach and 2 slices of cheese each
  4. fold into a wrap and place on a greased pancake griddle or pan over the stove for about 5 minutes on each side to crisp
