Gingerbread Latte Muffins

Time for a muffin that fits the winter season!  One of my favorite parts of the colder weather is the hot drinks.  Peppermint mocha coffee, apple cider, hot chocolate, etc.  Decided to try morphing one of the best winter drinks into a muffin…

These muffins are soft and fluffy and full of flavor.  There is just a hint of coffee taste combined with the flavors of molasses, ginger and cinnamon.  These go perfect with a cup of coffee ♥

What makes them healthier?  They about 3x higher in fiber than the average gingerbread muffin that I found and significantly lower in total and saturated fat.  Only slightly lower in sugar since one of the main stars of this recipe is the molasses/brown sugar taste that just can’t be substituted.  The taste and texture are great, yet you can feel good about eating this muffin.

 

Gingerbread Latte Muffins

Makes 12 muffins. Requires about 30 minutes from start to finish.

Ingredients:

1 cup all purpose flour

1 1/4 cup whole wheat flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon (heaping)

1 tsp ground ginger (heaping)

3 large egg whites

1 cup lite vanilla soy milk (or fat free cow’s milk)

1/4 cup unsweetened applesauce

2 Tbsp canola oil

1/3 cup molasses

1/4 cup brown sugar

2 Tbsp instant coffee granules (dry)

1 Tbsp turbinado sugar (optional)

Directions:

  1. preheat oven to 375ºF
  2. mix dry ingredients in a large mixing bowl (first 6 ingredients)
  3. mix remaining ingredients (except turbinado sugar) in smaller mixing bowl
  4. add wet ingredients to the dry ingredients and mix until just combined (do not over stir)
  5. distribute batter into a greased or paper-lined muffin tin
  6. distribute turbinado sugar evenly over all muffins directly on the batter (just a pinch per muffin)
  7. bake for 16-18 minutes until toothpick comes out clean
