Raspberry-Vanilla Overnight Oats

Breakfast can be tough.  I have an hour-long drive everyday to get to work, which doesn’t leave a lot of time to get ready in the morning if I want a decent amount of sleep.  Overnight oats is great for this reason.  It is a grab-and-go breakfast that is nourishing as well as delicious.  I like to make a few at a time so I have three days of breakfast all ready and waiting in the fridge for when I need one.

The other thing that is great about overnight oats is they are very versatile.  The base I use consists of oats, non-fat plain Greek yogurt, ground flaxseed, water and Splenda.  From there, I add whatever mix-ins sound good.  This combination provides a small portion of fruit, which goes a long way in contributing to fiber.  Seven grams of fiber in just one little mason jar.  Not a bad way to start off the day!

Raspberry Vanilla Overnight Oats

Makes 1 serving. Requires 10 minutes of prep time.  Sets overnight.

Ingredients:

6 Tbsp            old fashioned oats

1 Tbsp             Splenda or Truvia

1 Tbsp             ground flaxseed

1/4 cup           plain, non-fat Greek yogurt

1/2 cup            water (or more for thinner consistency)

1/4 cup            fresh or frozen raspberries

1/2 tsp             vanilla extract

Directions:

  1. add all ingredients to a mason jar and stir until well combined
  2. seal mason jar and leave in refrigerator overnight
  3. eat cold in the morning (could pour contents into a bowl and microwave if desired)

**Can stay refrigerated for up to 3 days.

Nutrition Facts: 205 calories, 5 grams of fat, 1 gram of saturated fat, 30 mg sodium, 40 grams of carbohydrate (3 carb choices), 7 grams of fiber, 4 grams of sugar, 11 grams of protein
