Cranberry Orange Flaxseed Muffins

Cranberry and orange flavors go so well together!  And the cranberries keep this recipe in the Fall theme (my favorite kind of theme!)  These muffins have a soft, orange flavored cake with juicy bits of cranberry in every bite.  Beautiful to look at and delicious to eat!

Cranberry-Orange Flaxseed Muffins

Makes 12 muffins.  Requires about 25 minutes from start to finish.

Ingredients:

1 1/2 cups     whole wheat flour

3/4 cup           cake flour

2 tsp              baking powder

1/2 tsp           baking soda

1/4 cup          granulated sugar

1/3 cup          Splenda or Truvia baking blend*

2 large           egg whites, beaten

3 1/2 Tbsp    orange zest (takes 1 orange grated almost all the way through)

3 Tbsp           flaxseed, ground

1 tsp               vanilla extract

1/4 cup          plant oil-based tub butter, soft/melted

1 cup               water

2 Tbsp            orange juice

1 cup               fresh or frozen cranberries (chopped finely)

Directions:

  1. Preheat oven to 350 and grease a 12-cup muffin tin
  2. sift dry ingredients (first five ingredients) together in a large mixing bowl
  3. combine remaining ingredients (wet ingredients), except for cranberries, in a small mixing bowl
  4. add the wet ingredients to the dry and stir until just combined–do not overmix
  5. fold in cranberries gently

6. scoop batter evenly into muffin cups and bake for 16-18 minutes, until tooth pick comes out clean
