Chocolate Chip Zucchini Muffins

I had the day off of work today and wanted to try another muffin recipe.  This chocolate/zucchini combination is such an easy way to sneak a little veggie in!  I feel like I am eating a dessert, yet it’s healthy enough for breakfast!  They are fluffy and just sweet enough to satisfy my sweet tooth.  Only 1/4 cup of sugar in the entire recipe–the rest of the sweetness comes from the banana (and a few chocolate chips)!

Chocolate Chip Zucchini Muffins

Makes 12 muffins.  Requires about 30 minutes from start to finish.


1 cup     whole wheat flour

1 cup     cake flour

1 1/2 tsp  baking powder

1/4 tsp   baking soda

1/4 cup   dark chocolate baking powder

1/2 cups shredded zucchini (about 1 large zucchini)

1 large   very ripe banana, mashed

2 large   egg whites, beaten

2 Tbsp    flaxseed, ground

6 Tbsp    water

1/4 cup   brown sugar, packed

1/4 cup   unsweetened applesauce

1 tsp      vanilla extract

1/4 cup   mini chocolate chips


  1. preheat oven to 350 and grease a 12-cup muffin tin
  2. sift dry ingredients (first five ingredients) together in a large mixing bowl
  3. combine remaining ingredients (wet ingredients), except for chocolate chips, in a smaller bowl
  4. add wet ingredients to the dry ingredients and mix until just combine; do not over-stir
  5. fold in chocolate chips and divide batter into muffin cups
  6. bake for 18-20 minutes until toothpick comes out clean
