Crockpot Cajun Lentil soup

Such a filling and nutritious recipe!  It is a cross between chili and classic lentil soup and perfect for a chilly evening.  The Cajun and bell peppers give it a kick, but the lentils and brown rice keep it classic.  Very high in fiber and a great source of protein, vitamin C and potassium.

Crockpot Cajun Lentil Soup

Makes 8 servings. Requires about 10 hours from start to finish.

Ingredients:

2 medium        red bell peppers, chopped finely

1 medium        onion, chopped finely

1 cup               dry lentils

½ cup              brown rice

4 cups              chicken or vegetable broth

1-2 cups           water

1 15 oz can      petite diced tomatoes

1 15 oz can      tomato sauce

2 cups              fresh or frozen spinach, chopped

2-3 tsp              cajun seasoning

½ tsp each       black pepper, garlic powder, onion powder

Directions:

  1. Add first 6 ingredients to crockpot and cook on low for 8-10 hours
  2. Add diced tomatoes, sauce, spinach and seasonings, stir, and let cook for another 20 minutes, then serve!
