Tomato soup is one of those classic meals, especially when paired with grilled cheese. With the addition of chopped spinach and some heart healthy fats (olive oil), it both satisfies hunger, nourishes the body and makes the taste buds happy.
Flavorful Tomato Florentine Soup
Makes 8 servings. Requires about 20 minutes from start to finish.
¼ cup olive oil
1 small can tomato paste (5 oz)
1 medium onion, chopped finely
1 Tbsp dried oregano
1 tsp garlic powder (or 1 tsp minced fresh garlic)
2 Tbsp dried basil (or ¼ cup fresh basil, chopped)
1 tsp black pepper
1/2 tsp cayenne pepper (can omit if you do not like heat!)
1 can no salt added petite diced tomatoes (or 2-3 cups chopped fresh tomatoes)
2 cans tomato sauce (15 oz each)
1-2 cups water
2 cups fresh (or frozen) spinach, chopped
½ cup fat-free shredded cheddar cheese
- Heat olive oil in a large pot for about 1 minute, then add onion and seasonings
- Cook until onion is translucent and soft, then add tomato paste and stir until combined
- Add diced tomatoes, tomato sauce and 1 cup of water and simmer over low-medium heat. add more water until desired consistency is reached.
- just before serving, stir in the chopped spinach and cheese
