Fluffy Pumpkin Chocolate Chip Muffins

It is so hard to make muffins that are higher in fiber, yet still light and fluffy.  Whole wheat flour often makes for a denser muffin.  I experimented using cake flour, and found a nice compromise!  Using a ratio of cake flour and whole wheat flour seems to bring in the best of both worlds.

Not only are these muffins higher in protein and lower in sugar and fat (much lower) than a typical recipe, the pumpkin adds the benefit of vitamin A.  This nutrient is essential for vision, skin and immune health.

Here is the recipe:

Fluffy Pumpkin Chocolate Chip Muffins

Makes 12 muffins.  Requires about 25 minutes from start to finish.

Ingredients:

1 1/2 cups            whole wheat flour

3/4 cups              cake flour

1 tsp                      baking powder

1 tsp                      baking soda

2 Tbsp                  pumpkin spice

(or 1 Tbsp cinnamon, 1/2 Tbsp ginger, 1/2 Tbsp cloves)

3/4 cup                 canned pure pumpkin

3/4 cup                  brown sugar, packed

3 Tbsp                   plant oil-based tub butter

3                             large egg whites, beaten

3/4 cup                   water

3 Tbsp                    mini chocolate chips

Directions:

  1. Preheat oven to 375°F
  2. Sift dry ingredients together in a large mixing bowl
  3. Combine wet ingredients (except for chocolate chips) together in a medium mixing bowl
  4. Add wet ingredients to the dry ingredients and mix until just combined (do not overmix)
  5. Grease a muffin tin and fill each section 3/4 full
  6. Bake for 17-18 minutes until toothpick comes out clean
